We were traveling and had this in of all places an airport. I couldn't believe it! A super sandwich!
Be sure and have mis en plas before toasting the sourdough otherwise it will be cold. Makes enough for four sandwiches. All the work is in the pickled tomatoes and pimento cheese. The rest is a snap!
Bacon, 12-16 pieces, thick sliced, fried done, but not super crispy
Fresh Sourdough Bread - sliced, toasted just before assembly
8 slices - Pickled Green Tomatoes
1 - 1 1/2 Cup Good quality jalapeno pimento cheese
Dukes or Hellmans Mayo (no miracle whip)
Crisp lettuce
Cook the bacon and have everything ready to assemble the sandwiches before toasting the bread
Toast the bread lightly
Smear an even coat of mayonnaise on the inside of the toast
Add a generous portion of pimento cheese to one side of the sandwich top with lettuce
Place bacon longways on top of the lettuce
Place two pickled tomato slices on the opposite side of the bread
Top and slice sandwich diagonally.
