This is a simple alternative to traditional roux made on the stovetop. It takes a little longer but requires minimal attention and has the same results.
Yield 1 1/2 c
Time 2hr
1 c flour
3/4 c vegetable oil
Heat the oven to 350 degrees. In a large pyrex dish or cast iron skillet, whisk together the flour and oil to make a paste.
Place the skillet in the oven and bake for 90 minutes to 2 hours for a dark roux, stirring every 30 minutes.
Once the roux has achieved your desired color. I like mine just slightly darker that after milk chocolate.
Transfer to a storage container and refrigerate or straight into a dutch oven for gumbo.
