Super simple Greek style bake. The chicken brines in the lemon bath overnight and is simply delicious. Serve with Melting Potatoes and a salad.
1 whole chicken (alternatively you could use leg quarters)
8 ounces lemon juice
1 stick unsalted butter, melted
Oregano
Salt
Pepper
Garlic powder
Cut chicken into four pieces: halved breasts with a wing attached and leg quarters with the thigh. Leave the skin on.
Place chicken in a non-stick, non-reactive pan (cast iron is not recommended because of the acid in the lemon juice). Pour lemon juice over the chicken, then coat with melted butter. Generously season the chicken pieces.
Refrigerate for several hours, preferably 8-10 hours.
When ready to cook, preheat oven to 350 degrees.
Bake 1 hour and allow chicken to rest before serving. Breast meat is done at 145-150 deg F, dark meat needs to cook up to 165 deg F
