A fabulous light breakfast favorite, especially if you have some lump crab. This can be purchased at your favorite seafood market or even at Costco. You could use jumbo lump but that should be used for crab rolls. We generally use regular lump or leftover crab knuckle meat from a local restaurant we frequent.
4-6 oz of cleaned picked over crab meat chilled
4-6 pieces of buttered toast
4-6 tbsp ricotta cheese
butter
avacado sliced
maldon salt and fresh ground pepper
fresh basil (optional)
Mise en place (everything in place)
Get the crab ready and chill in refrigerator.
Toast and butter the bread
Spread about a tbsp of ricotta evenly
Dollop the crab meat on top
lay slices of avocado on top
salt and pepper
Serve Immediately
