Polynesian Chicken Pasta
4 skinned boneless chicken breasts
4 cups penne or rigatoni pasta, prepared and chilled
1/2 cup chopped red pepper
1/3 cup chopped green pepper
1/2 cup grated baby carrots
1/4 cup shredded purple cabbage
Honey
Sweet and sour dressing
Prepare chicken breasts as shown in Grilled Chicken cut into small strips
Prepare pasta el dente style and chill.
Chop red and green peppers into 1/4" pieces
Grate carrots with large opening grater
Shred cabbage.
Combine all ingredients and toss with dressing add honey until desired sweetness is reached.
