This is some good, old school snacking, like mom used to make. The key is letting the cheese get room temp so that it is soft enough to mix will. The pineapple gives it a nice sweet tang and the onions and bell pepper add some crunch. An excellent appetizer, served with crackers.
2 - 8oz pkgs of creme cheese
2 - cups finely chopped pecans
1 sm can crushed pineapple, drained
1/4 cup bell pepper chopped
1/4 cup onion chopped
Allow cheese to soften, Add all ingredients,
reserving 1/2 cup of pecans, form into ball.
Pour pecans onto wax paper and roll ball
coating with pecans.
