Folks this is some serious good dip. The flavors combine to create that delicous umami. The crunch of the pita chips, peppers and zing of the banana peppers make it a true hit. Feta make it betta!
Serve with Baked Pita Chips (I like Stacys Plain Baked Pita Chips if store bought)
Bottom Layer
1 - 8 oz cream cheese, softened
1/2 cup sour cream
3T dry ranch dressing – Hidden Valley Dressing – not dip or buttermilk
2T freshly squeezed lemon juice
1 T dried oregano
2 cloves of garlic , minced
Top Layer
1 -14oz can of artichokes quarters, squeeze to drain all liquid and chop -- trim the chewy part and only use artichoke bottoms
1 cup banana peppers or pepperocini (spicier) chop in thin strips
1- 4 oz. can sliced black olives or 4 oz. of kalamata olives sliced, drained
1 cucumber peeled seeded and diced
1 each Red and Green Bell Pepper seeded and diced
1 cup feta cheese, crumbled
In a bowl mix the cream cheese, sour cream, dry ranch dressing, lemon juice, dried oregano and garlic. Then spread the mix evenly across the bottom of a large platter.
Layer the artichokes quarters, banana peppers or pepperocini, black olives or kalamata olives, cucumber, Red and Green Bell pepper over the cream cheese mixture.
Top all with feta cheese
Serve with Baked Pita Chips (I like Stacys Baked Plain Pita Chips)
