Granny Bonnie's secret Taco Soup recipe! A simple recipe with basic ingredients that is super easy to make. Feeds 10-12 and easily ready in a couple of hours.
This is a great recipe for a grey, chilly day. It's filling and quite tasty as well as making enough to even have leftovers. It freezes well and generally tastes better after leaving it overnight in the fridge for the next day.
We tried ground pork rather than beef and found this tasty as well. We used 1lb ground pork and 1lb ground italian pork sausage. It's not the original recipe but in a pinch the other white meat works.
2lb ground beef
1 large onion chopped
16oz can whole kernel corn
four, 16oz cans of diced tomatoes
4 oz can of chopped green chilis
16oz can of pinto beans
16oz can of red beans
1oz pkg of ranch dressing mix
1 1/4 oz pkg of taco seasoning mix
8oz sour cream
1 cup grated cheddar cheese
Fritos corn chips (small size)
Brown meat with onion and drain off excess fat.
Add corn, tomatoes, chilis, beans and both packs of seasoning mix.
Simmer for one hour, serve in soup bowls topping with cheese, placing chips around the edge with a dollop of sour cream.
