Rich and complex. Delicious with a beef fillet or roast beef. Hell it's almost a meal within itself.
Two bakiing potatoes
1/4 cup crumbled soft bleu cheese
1/2 stick butter
2 strips bacon, microwaved and crumbled
salt and pepper to taste
1/4 cup half and half
1/4 cup grated cheddar cheese for garnish
Grated parmesan cheese
Microwave potatoes until almost done. Let cool enough to handle
Cut up bacon in small pieces and mircowave until crispy. Break into small pieces. Reserve
Half the potatoes long ways and scoop contents out into the bowl bacon was cooked in leaving about a 1/4" in the skin.
Preheat oven to 350
Cut up butter into small cubes and add two thirds of butter to potatoes
Crumble and Add half the bleu cheese to potatoes
Microwave potato mixture for two minutes and mash, mix with a fork
Add the half and half and and bacon and mash together with fork
Sprinkle bottom of potato skins with parmesan and remaining bleu cheese
Fill each skin with potato mixture and top with cheddar cheese and fresh ground pepper
Place in ovenproof skillket with remining butter, skin side down and bake on 350 for approximately 30 minutes or until the bottom is crispy and the top is golden brown.
