Carne Asada Tacos

Carne Asada Ingredients

• 2 pounds of flank steak or skirt steak
• 1/2 cup chopped cilantro -(1/4 C reserved)
• The juice of 1 orange
• The juice of 2 limes
• 4 grated garlic cloves
• 1 1/2 tsp chipotle powder
• 1 tsp ground cumin
• 1 tsp onion powder
• 1 tbsp dried oregano crushed in your hand over the mix
• 2 tablespoons of balsamic vinegar
• 1/4 c tablespoons of Dark Soy Sauce
• 2 tablespoons of vegetable oil
• Fresh ground pepper to taste
• Vegetable oil to brush the grill before grilling

TO SERVE:

• Corn tortillas
• Guacamole
• Fire Grilled Salsa
• Lime wedges
• Grilled green onions or a salad of your choice.

Instructions

• In a medium-sized bowl mix together the orange juice, vinegar, lime juice, chipotle powder, onion powder, cumin, soy sauce, vegetable oil, cilantro and freshly ground black pepper.
• Dredge the flank steak thru rhe marinade turning so both sides get coated well, place in a large baking dish
• Pour the remaining marinade over the meat; cover with a plastic film and refrigerate for at least one hour.
• Light up your charcoal grill, and have oak or other smoking wood ready to go on top of the coals. (You can also use a cast iron grill pan, if you are using a over a stove). And brush your grill with a little vegetable oil as this will prevent the meat from sticking.
• Remove meat from marinade and place meat on the grill and cook for 5 to 8 minutes per side. (Cooking time will depend on the meat thickness and your personal preferences, either medium rare 125 deg f, medium ,155 deg f or well done). Remove meat from grill and place it on your cutting board. Slice it across the grain and dice if serving with corn tortillas and other garnishes mentioned above.
