A delicious appetizer with a nice crunch and soft creamy interior. It takes a bit of work to fix it but it is quite good and freezes well for a quick crowd pleaser.
From one of my favorite restaurants in Fairhope Al. Tamaras! Located in the heart of Fairhope. Be sure and visit if you get a chance. Cameron at the bar does a great job!
Two - Avocados, almost ripe (not mushy ripe)
2 cup panko
2 eggs
2 tsp Tajin
1 tsp garlic powder
oil for frying
parchment paper
chipotle ranch or sriracha mayonnaise for dipping.
Cut avocado in half and remove the pit. Scoop avocado out being careful to get as close to the peeling as possible. Slice each half into 4-6 pieces.
Arrange avocado pieces onto a small parchment lined sheetpan and place in freezer for a half hour.
Place eggs in one bowl and beat.
Place panko in a separate bowl and mix in garlic powder and Tajin.
Gently dip the avocado pieces in the egg wash than into the panko mix and place back onto parchment lined sheet pan.
Place back in freezer for another 30 min if cooking then or longer for long term storage. Once frozen place in vacuum bags for long term storage.
About 6 pieces is a good for appetizer for 2-4 people.
