The Head- steamed oysters MANY Thanks to my good friend John Bresnan. We found these at Eddy Teach Raw Bar on St George Island Fl on my birthday . Over many beers we discussed the name and eventually figured out that it meant was that flavor wise they just hit the nail on "the head"! Double nickels for me, never had it so good!
1 cup spinach finely chopped
6 strips crisp bacon crumbled
2 fresh jalapeño seeded and diced
1 cup grated asagio cheese
2-3 doz shucked oysters on half shell
garlic salt to taste
Put first four ingredients in bowl and toss together lightly top each oyster with 1 heaping tsp of mixture, then sprinkle each with garlic salt place on hot grill until just bubbly around edges remove from heat and enjoy.
