Smoked Tuna Dip
16 oz Smoked tuna, chopped. Smoke @175-200° until internal temp is 140, do not overcook.
1/2 c mayonnaise
1 tsp garlic powder
1/2 tsp cayenne
1 tsp lemon juice
1/4 onion diced
1/4 c finely diced scallions
1/4 c finely diced parsley
1 tsp or more to taste tabasco
1/4 tsp liquid smoke, more or less depending on brand and taste
Mix together thoroughly and store refrigerated for up to five days. Garnish with paprika and serve with pita chips or lavash.
