Pastrami Seasoning
Pastrami Seasoning
I use this in my recipe for both Pastrami from Corned beef and Turkey Pastrami.
Of note, it has no salt, this is due to the fact that it is normally applied to meat that is already salt cured.
Makes about 1 cup
Ingredients
4 tablespoons plus 2 Tbs whole black peppercorns (grind 2 coarsely)
2 tablespoon whole coriander seeds
2 tablespoon coriander powder
2 tablespoon brown sugar
2 tablespoon smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon whole yellow (white) mustard seeds
1 teaspoon mustard powder
Preparation
Grind 2 Tbs black peppercorns coarsley
Combine and grind the coriander seeds and 4 Tbs black peppercorns thru a spice mill or grinder
Combine remaining ingredients in large bowl and mix well.
Store in airtight container
