black bean and chicken enchiladas
A really tasty dish that dissapears quickly and if there are leftovers freezes wonderfully.
1 - 15oz can whole black beans
2 - grilled chicken breast - chopped
2/3 cup grated cheddar cheese
2/3 cup grated monterrey jack cheese
1 cup favorite salsa
1 - sm can hot enchilada sauce
8 lg flour tortilla
1/4 cup sliced pickled jalapenos
1/2 red onion diced
1 tomato cubed
1 sprig fresh cilantro or parsly for garnish
Mix chicken beaans, jalapenos and half the cheese in a large bowl.
Lay tortillas flat and spread on each one 1 tsp enchilada sauce.
Place longways across middle each of tortilla 3-4 tbsp of chicken mixture.
Roll up and place in large baking dish.
Top enchilada sauce, salsa then remaining cheese, tomatos and onion .
Bake on 350 for 25 min or until bubbly around edges
