Making your own blue cheese dressing at home is simple and worth the extra effort. So easy with blue cheese, sour cream, mayonnaise, and buttermilk, plus a touch of lemon juice to kick it up.
Makes about 1 1/2 C
2 ounces good blue cheese
1/2 cup hellmans mayonnaise
1/2 cup sour cream
1/2 cup whole fat buttermilk
1T fresh juice from 1 lemon
Freshly ground black pepper
Kosher salt (if needed)
In a medium bowl, mash blue cheese with a fork.
Whisk in mayonnaise, sour cream, buttermilk, and lemon juice until a smooth, slightly lumpy dressing forms. Season with pepper. (The blue cheese will likely make the dressing salty enough, but taste and add salt if necessary.)
Serve over a crisp cold wedge of iceberg lettuce on a cold plate topped with crumbled bacon
