Just simply tasty with that nice spiky margarita taste and a chunk of peach! Try some of these before your next Mexican dinner. Do ahead day before, refrigerate.
Makes about 50 - 1 1/2 oz shots
2 C boiling water
2 C chilled water
2 ripe peaches, peeled and diced into 1/2" cubes
1 C sugar
6 Envelopes KNOX Unflavored Gelatin
1 C Fresh Lime Juice
1 C Fresh Orange Juice
4 C Blanco Tequila (100% blue agave)
Maldon or other finishing salt
2 oz plastic condiment cups
Combine juices and tequila, mix thoroughly and chill.
Fully dissolve sugar in 2 cups of boiling water.
Remove from heat.
Stir the gelatin into the 2 cups of chilled water. Add the hot sugar and water mixture continue mixing until fully dissolved. Sometimes this will take up to 5 minutes. If the mixture has clumps in the bottom it is not fully dissolved and it will not set up. Remove some of the water and reheat in microwave and remix until fully dissolved. I've found pouring this thru a strainer helps.
Add mixture to the cold juice, water, booze mix and stir very well.
Put one chunk of peach in each condiment cup, pour the mixture and refrigerate until set, about 2-4 hours.
Before serving, place a small pinch of Maldon salt or Tajin on top.
