This is a feast best served on a covered pier, outside. Theres lots of shells, shrimp heads and crab bodies that are throw away so why not feed the fish with them. This dish takes some work but the rewards are many. It only takes a couple of big strainer pots and a propane burner. Serious good eats, feeds about 20 - 25!
8 lbs jumbo shrimp
8 lbs royal red shrimp
1 doz ears sweet corn , shucked and cut in half or thirds
10 lbs new potatoes
2 bulbs garlic , topped
2 lemons , sliced in half
1 lime , sliced in half
3 doz jumbo blue crabs
3 lbs conecuh smoked sausage , cut into 3 in pieces
2-4 cups zatarains (or comparable) seafood boil
In large strainer pot cook potatoes and garlic first, adding corn and sausage when potatoes are almost done.
Add blue crabs and lemons to same pot cooking for only 5-6 mins.
In second strainer large pot with seasoned water boiling add shrimp, cook only until barely done 2-3 minutes. Remove shrimp, drain and season liberally with seafood boil and cover for 3 additional minutes.
Let potatoes, corn and sausage drain momentarily and pile onto table serving immediately....
