Super easy, no separating or whipping egg whites or waiting. Just mix mix heat the iron and cook. This recipe is as good as the classic recipe.
Serves: 4 to 6
4 8-inch round waffles
Ingredients
2 c all purpose flour
4 t baking powder
1 T sugar
2 large eggs
1 t vanilla extract
1/2 c butter, melted
1 3/4 c milk
non-stick cooking spray
Directions
Preheat the waffle iron according to the manufacturer's instructions. In 1 medium bowl mix together flour, baking powder, and sugar. Set aside.
In a second bowl use a fork to beat the eggs until they have turned a pale yellow. Add the vanilla extract, melted butter, and milk to the eggs and whisk to combine. Combine the egg-milk mixture with the flour mixture and whisk just until blended. It should be the consistency of thick milkshake. If its too thick add about a 1/4c of water and stir well to mix.
Coat the waffle iron with non-stick cooking spray and pour enough batter in iron to just cover waffle grid. My waffle iron uses just over 1 cup for a whole 8 inch waffle. Add any fruit to each section just before closing the lid and cook until golden brown, about 2 to 4 minutes. We like ours extra crispy so on my iron it takes actually just over 4 minutes each. If storing to keep warm place on a rack and do not stack. Serve immediately.
