2 to 5 lbs. jumbo head on shrimp with shell
Black pepper - 1 cup
1 lb. butter
1/4 cup olive oil
1 package Cajun King Barbecue Shrimp Seasoning Mix®
several sprigs of fresh rosemary
Salt to taste
Melt butter with olive oil. Simmer over low heat; slowly blend in seasoning mix. Simmer 5 minutes; remove from heat.
Preheat oven on bake to 400
Wash shrimp in cold water, draining well. Leave heads and shells on shrimp. Divide shrimp among several baking dishes, place one layer thick.
Sprinkle black pepper heavily over shrimp until black pepper covers most of the shells. This will seem to be an excessive amount of pepper - yet the procedure is correct.
Pour sauce over shrimp proportionately. Bake in 400°F oven for 20-25 minutes, basting and turning several times. After 10-15 minutes, sample shrimp to determine when fully cooked. Salt to taste.
Serve with warm italian bread and sauce from bottom of baking pans for dipping.
