This is a great weeknight meal. Tasty and filling it is also healthy and meets many dietary needs.
The salty sweet "turkey tips" are simply some turkey tenderloin, cut up in bite size pieces and marinated then skillet seared in just a little oil. They are plated in a shallow bowl over the prepared rice and served along with a cucumber salad.
Generally plan on about 4 oz of turkey per person. The marinated turkey tips could be used in a number of other dishes such as fried rice or a Turkey Bahn Mai.
1 turkey tenderloin cut up in bite size pieces (about 1 1/2 lb)
1/4 cup Teriyaki marinade
1 1/2 C Prepared Rice
1 cucumber, peeled and seeded, sliced in half lengthways then sliced thin on a diagonal.
1/8 Cup rice wine vinegar
1/2 T sesame oil
1/2 T chili oil
1 T sugar
furikake for serving
Make the Teriyaki marinade and pour about 1/4 cup over cut up turkey, tossing to coat. I'll either use a gallon zip lock or a medium bowl covered in refrigerator overnight.
Make the prepared rice
Peel and cut up the cucumber
Make the dressing add cucumber and toss
Drain the marinade from the turkey tips and sear two servings of the turkey tips in a skillet with a little oil until done, about 5-6 minutes. Reserve the remaining turkey tips for another recipe.
Plate 3/4 c rice to one side of a shallow bowl, sprinkle with furikake, plate the cucumber salad opposite the rice, plate the turkey on top of the rice.
