Rather than the same old cheese and crackers, here's a unique and easy crowd pleaser. Gorgonzola Tarts with Spicy Honey. They’re a perfectly composed bite, and really simple to make.
1 sheet puff pastry, rolled out thin, cut into 12-15 equal size pieces
12-15 slices of sweet onion, size to fit the pastry pieces
3 heaping tbsp of crumbled gorgonzola (at room temperature) or other good melting blue cheese (about 1/2 - 3/4 tsp per)
spicy honey for topping
Preheat middle rack of oven to 400 deg. F
On a parchment covered sheet pan, bake slices of onion under puff pastry squares, until the onions are caramelized and the pastry is crisp and golden.
Remove from oven and using a spatula, carefully flip the onions and tart over and top them off with room temperature Gorgonzola.
Finish with a drizzle of habanero or other pepper-infused honey for some heat.
Garnish with dried pepper flakes or herbs of your liking
