Delicious accompaniment to fish or anything rich. Bright and slightly sweet flavors make this simple salad elegant for many pairings. It is shown at left snuggled under a Miso Salmon bowl.
This salad doesn't hold up well and might be ok the next day but otherwise toss it.
1 large cucumber, partially peeled, seeded (if needed), halved longways and sliced 1/4" thick.
1/4 large red onion, thinly sliced onto bite size slivers
1 tsp garlic chili sauce
1/4 cup rice (white wine vinegar can be sub) vinegar
1 tbsp brown sugar
1 tsp sesame oil
2 tsp roasted sesame ginger seasoning (optional)
Combine the white vinegar, brown sugar and garlic chili sauce in a medium bowl.
Slice the cucumber and onion and toss in the bowl, let sit for 30 minutes.
