A delicious snack that keeps well and is fairly easy to make.
Watch closely for burning.
Mixture should be golden and will be sticky and loose when first removed from oven but turns crispy when it cools.
1/2 cup brown sugar
1/3 cup un-sulphured molasses
1/3 cup honey
3 Tbsp grapeseed oil
1 1/2 tsp vanilla
4 cups rolled oats (not quick cook)
1 cup un-blanched almonds (sliced)
1 cup raisin bran crunch (raisins removed)
1/3 cup unsweetened coconut
1/3 cup pumpkin seeds (or flax or other)
1/2 cup chopped pecans
1 cup chopped walnuts
1 cup mixed nuts raw (unsalted, cashews, peanuts, ets) roughly chopped (ok to substitute salted)
1 cup dried raisins
1 cup dates, pitted and roughly chopped
1 cup dried cherries, pitted and chopped
In a large pyrex measuring cup mix first five ingredients and microwave 1 1/2 minutes, stir well
In a large bowl mix grains and nuts. Reserving raisins, dates and cherries.
Pour 1/3 of the wet ingredients and stir, repeating until the mix is well coated.
Spray two cookie sheets with oil and spread the grains mixture evenly.
Bake in convection oven at 300 degrees for 15 minutes.
Remove from the oven and stir, add raisins, dates and cherries, tossing the mix and spread again
Bake another 10-15 minutes. Watch closely for burning. Mixture should be golden and will be sticky and loose when first removed but turns crispy when it cools.
Cool on baking sheets.
Crumble and store in air tight containers.
