This condiment is so easy to make yet it adds another level of flavor and texture to your favorite recipes. Easily added to the top of burgers, tacos, salads, and soups. Keeps well in refrigerator.
1 small red onion, thinly sliced lengthwise (about 2 1/2cups)
1 cup distilled white vinegar
1 cup water
2 tablespoons granulated sugar
1 tablespoon kosher salt
Place sliced red onion in a medium-size pyrex bowl; set aside. Combine vinegar, 1 cup water, sugar, and salt in a small saucepan. Bring to a boil over medium-high heat, stirring often to dissolve sugar. Pour hot vinegar mixture over onion, pressing onion pieces with a spoon to keep submerged. Let stand at room temperature 10 minutes. Cover and chill at least 1 hour or up to 3 days.
