A delicious appetizer thats super easy to create. It can also be filled with anything you like. This recipe is like a base version. Start here and just let your imagination run wild. Savory, sweet or spicy, all will be good.
Pinwheels also freeze well and will keep for several months.
Puff Pastry (1/2 package)
1 egg, beaten
1/2 cup grated parmesan cheese
1/4 cup cream cheese
1 green onion, finely diced
1 cup cooked frozen spinach
1/2 tsp garlic salt
Let the pastry thaw (about 40 minutes), meanwhile thaw the spinach and press between paper towels to remove the water.
Combine in a medium bowl the spinach, cheeses, onion and garlic salt. Mix well.
Lay down a piece of parchment paper for easy cleanup. Toss a little flour. Unfold the pastry, removing the parchment and place on a lightly floured surface.
Brush the pastry with the egg.
Spread the spinach and cheese mixture evenly over the egg leaving about an inch of the pastry uncovered along one side. Brush the uncovered edge with a little more egg.
Using the parchment, roll the pastry like a Jelly roll towards the uncovered edge. Winding up with placing the seam side down. Place wrapped pastry in refrigerator for a couple of hours.
Preheat oven to 400 deg F. Prepare a cookie sheet with parchment. Remove pastry from the refrigerator, unwrap and slice into 1/4" to 1/2" thick rounds.
Bake 12-15 minutes or until crispy on bottom and slightly golden on top.
