Some of the best granola ever! Crunchy, sweet, chewy and flavorful. This recipe takes a little while to make but it is absolutely delicious!
Substitutions can be made such as hazelnuts for pecans or more coconut for unavailable wheat germ.
Watch baking carefully as in the last 10 min the sugars in it will easily burn. Mixture should be golden brown but will not be crispy until it cools.
1/2 cup brown sugar
1/4 cup un-sulphured molasses
1/4 cup honey
3 Tbsp canola oil
1 tsp vanilla
4 cups rolled oats (not quick cook)
1 cup dried cranberries (cherries, raisins )
1 cup un-blanched almonds (sliced)
1/3 cup unsweetened coconut (I find this with Mexican spices)
1/3 cup sunflower seeds (or flax or other)
1/4 cup wheat germ (or ground flax)
1/2 cup chopped pecans
1 cup chopped walnuts
In a large pyrex measuring cup mix first five ingredients and microwave 1 1/2 min, stir well
In a large bowl mix remaining ingredients.
Pour 1/3 of the wet ingredients and stir, repeating until the mix is well coated
Spray two cookie sheets with oil and spread the mixture evenly
Bake in convection oven at 300 degrees for 10 minutes
Remove from the oven and stir, tossing the mix and spread again
Bake another 10 minutes. Mixture should be golden and will turn crispy when it cools
Cool on baking sheets
Crumble and store in air tight containers.
