A favorite old school Northern Italian dish. Simple, Tuscan cooking is fabulous yet delicious and completely satisfying. Serve with a light red wine, salad and garlic bread.
1/2 cups extra virgin olive oil
1 lg onion, diced
1 cup small-diced carrot
1/2 cup small-diced celery
1 TBSP minced fresh garlic
1 tsp Italian blend seasoning
12 oz ground beef
12 oz ground pork
1/2 cup mushrooms (processed)
1 tsp kosher salt
1 tsp freshly ground black pepper
1/2 tsp crushed red pepper
1 sm can (6-ounce) tomato paste
1 lg can (28 oz) crushed tomatoes
1 cup milk
1 cup dry white wine
Season with salt and pepper to taste
Heat the oil in a large heavy-bottomed skillet over medium heat. Add the onions, carrots, celery, and garlic, cover; and cook until soft, not browned, 10 to 15 minutes.
Add the beef, pork, salt, pepper and mushrooms then cook over high heat, stirring frequently, until the meats have browned. Drain off excess fat.
Stir in the tomatoes, paste, milk, and wine, reduce the heat to low, and simmer for 1 hour, stirring occasionally.
Serve over your favorite pasta with garlic bread. If not using immediately, let cool, then store in a covered container in the refrigerator.
