Crispy, Crunchy, Tangy and Healthy! Take a few minutes to prepare this delicious salad and you will be rewarded with a flavor sensation. Serves Four
Preparations
2 cups chopped romaine
1 cup chopped baby spinach leaves
1 avacado, scooped out, coarse chop
1 cup chopped grilled chicken (leftovers)
1/4 cup chopped celery
1/4 cup chopped cucumber peeled, no seeds
1/2 pack turkey pepperoni, fried crispy (reserve drippings)
1/2 cup squash diced sautéed lightly in reserved drippings, butter, 1/2 tsp rosemary, salt and pepper to taste.
Prepare ingredients, toss all but pepperoni in large bowl with greek dressing (or your favorite), top with:
pepperoncini peppers
cherry peppers
olives
feta cheese crumbled
fried pepperoni
Serve Immediately
