Best ever, fabulous fish sandwich! Takes some preparation but can be put together quickly with mis-en-place. I make the slaw and the lake sauce in advance. The fish is lightly blackened and served on a buttered, toasted brioche or potato bun, with a little smear of lake sauce, a light slaw and pickles.
As a side, crispy baked french fries is a healthier alternative to deep fried. Serve those with ketchup for dipping. I prefer the "Lamb Weston, Grown in Idaho, Super Crispy" brand. They are just as good as any deep fat fried and the hold their crispiness better.
As an option you could skip making the lake sauce and slaw and just use thousand island dressing and top with lettuce and tomato.

Baked French Fries
Bread and butter pickle chips
4 - Brioche or Other soft bun
Butter for buns
4 - 4 to 6 oz - white fish fillet - almost any flaky fish will work (snapper, grouper, mahi, striper etc), thawed, skin removed.
Blackened fish seasoning (Tony's Old Bay or your favorite)
Vegetable Oil for blackening the fish
Make the slaw and lake sauce up to two days in advance.
Preheat the oven and prepare sheet pans as needed for the baked french fries according to instructions on package. These usually take 20-30 minutes to cook after preheat.
Butter the inside of the buns and set aside.
Season fish fillets all over with the blackening seasoning of your choice.
Meanwhile place french fries in the preheated oven.
About 5 minutes before completion of fries heat the skillet for the fish.
Cook fish on a preheated med high skillet until undersides of fillets are darkened and a slotted fish spatula can be slid under with little resistance, about 4 minutes. Flip fish and repeat on other side. Cook until an instant-read thermometer inserted in the center registers 140°F . Transfer fish to a platter to rest.
Toast buns in the same hot skillet, then build sandwiches. Spread lake sauce on bottom and top of buns; pile slaw and pickles then set fish fillets on top and close sandwiches.
Serve sandwiches right away plated with fries and ketchup.
