Grapefruit Tequila Smash
An amazingly refreshing cocktail made with grapefruit zest. It takes a little work but the rewards result in a flavor parade for your mouth. Bitter, Sweet, Salty and Sour all together in one little drink.
The syrup takes about 15 minutes, it's really very easy to make. Especially if you have a fruit press. I think the toughest thing was zesting the grapefruit . This is made easy with a fine cheese grater. This lasts about two weeks in the fridge, unless you DRINK IT ALL in one night.
Grapefruit Smash Syrup Ingredients (makes about a quart enough for 25-30 cocktails)
3 grapefruit (about a cup and a half of juice)
4-6 limes (about a cup of juice)
1 cup sugar
1 tbsp kosher salt
1 c water
Zest two grapefruit using a cheese zester. Do not get any of the white pith.
Place zest in a 2 qt container.
Add juice from 3 grapefruit (about a cup)
add juice from 4 limes (about a cup)
Cover with 1c sugar
Add 1 tbsp kosher salt
Add 1 c water
Stir until dissolved, store in airtight jar in refrigerator, lasts about 2 weeks.
1 1/2 oz blanco (silver) tequila
1 oz grapefruit smash syrup (strain as you pour into glass, returning pulp back to other syrup)
orange peel (optional)
Top with lime soda water and a twist of orange peel, stir and serve.
