This simple recipe combines a dry rub and a marinade to round out the flavors. The chops are grilled quickly on a super hot fire and are usually about 2 or 3 good bites each. A rack will usually feed 2-3 people maybe 4 if you have an appetizer before dinner.
We usually get our racks at Costco and they're usually imported from New Zealand and are good quality.
They can be served with a number of side dishes but we usually dial up some Melting Potatoes and asparagus. I also like to have a side of Tzatziki Sauce to dip these in. I also keep some of the dry rub on hand, its also good on pork chops.
Lamb Marinade
3 tbsp honey
3 tbsp lemon juice
3 tbsp soy sauce
2 tsp crushed garlic
Lamb Rub
1/4 c black pepper
2 1/2 tbsp brown sugar
2 tbsp kosher salt
1 1/2 tbsp garlic powder
1 1/2 tsp allspice
Preparation:
Slice rack of lamb into individual chops
Apply dry rub and work individually into chops
Toss chops with marinade in large bowl coating well.
Let rest in marinade for at least an hour or overnight.
Grill over high heat quickly, about 1 min each side, best served medium rare.
