This is just heavenly. The lemon sauce really makes it. From the kitchen of: KimINGREDIENTS:3 beaten large eggs (4 if smaller)
1 cup sugar
2-1/2 cups mild (whole works best)
1-1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
4 fresh peaches or bottled equivalent
4 peeled, sliced apples
6 cups day old bread chunks
6 Tbs butter cut into small chunks
INSTRUCTIONS:
Coat 9x13 baking dish with cooking spray. Preheat oven to 350°
In large bowl, combine eggs, sugar, milk, cinnamon and nutmeg and stir until smooth.
Fold in peaches, apples, and bread chunks until bread is well coated.
Pour into baking pan and put butter chunks on top
Bake for 1 hour, until set. Serve warm with lemon sauce:
LEMON SAUCE:
INGREDIENTS:
1 Cup white sugar
2 Tbs cornstarch
1-1/4 Cup water
3 Tbs butter
1-1/2 tsp grated lemon zest
1-1/2 Tbs lemon juice (if you have real lemons instead of the bottled stuff, the sauce has more of a zing to it and it tastes more like real lemon)
1/8 tsp lemon extract
1 drop yellow food coloring if desired
INSTRUCTIONS:
In a saucepan, mix together sugar, cornstarch and water. Cook over medium heat, stirring constantly until mixture is thickened.
Remove from heat and stir in remaining ingredients until well mixed
