Katie's Taco Soup
Here's my super easy, nothing fancy taco soup. From the kitchen of: Katie
INGREDIENTS:
1 lb hamburger
1 medium chopped onion (or however much you want)
1 can tomato sauce (8oz)
1 can stewed tomatoes (16oz) - I've used home canned as well as store bought
1 can drained kidney beans (16oz)
1 can corn (16oz) - including juice
1/2 pkg taco seasoning (or more if you like the spiciness)
1 C water (ish - see step 2)
INSTRUCTIONS:
Brown the hamburger and onions in a soup pot.
Add everything else - I always drain the kidney beans because I think that syrupy stuff looks nasty, but if you decide to keep it in, you probably won't need as much water. In fact I add the water last and put in just enough to make it the consistency I like (more water = more soupy ; less water = more like a stew)
Bring to boil and then turn down the heat to simmer until heated through and the flavors have blended.
Serve with cheese, sour cream, green onions, tortilla chips, and any other garnish that sounds particularly tasty.
