More uses for strawberries and rhubarb!

INGREDIENTS:
About 6 C diced strawberries
About 4 C diced rhubarb (you will need to cook it down & retain water/juice)
1/3 C Honey +/- to taste
1 tsp vanilla
Additional juice or water as needed to thin the puree
INSTRUCTIONS:
Start with the rhubarb since it needs to cook down first. You can cook it on the stove, but I chose to Instant Pot it! I put the 4 C of rhubarb into a metal bowl slightly elevated off the bottom of the Instant Pot insert. Make sure to put a cup or more water in the bottom. Manually cook on high pressure for 4 minutes and let the pressure release for a few more minutes.
While the rhubarb is cooking down, top and dice the strawberries.
Puree the strawberries and add the honey and vanilla.
Add the rhubarb plus its juice when it is done cooking. If the puree is still very thick, add some water or juice to thin it up a bit (it will stay in one continuous sheet better if it's a little thinner while it dries slowly, than too thick, too fast!)
This should make about 6 C of puree. For my dehydrator I use 2 C per sheet, totaling 3 sheets for this batch.
Dehydrate! Low and slow!
When you pull them out, wrap both sides in plastic wrap and roll up.
MAKES: 3 of my round trays... 12 roll-ups!
