This salsa is sweeter than the average salsa, but we love it. If you want to try some, we have a lot of this stuff in our food storage, so let us know. As with any salsa, to make it hot, add more jalapeno seeds. To make it mild, leave the jalapeno seeds out. To make it chunky, let it simmer for longer. Just let it simmer (sometimes this can be hours) until it is to your desired consistency.
INGREDIENTS:
½ bushel skinned and mashed tomatoes
less than ¼ cup canning salt
¼ - ½ cup sugar
1 cup vinegar (white or yellow)
5 large yellow onions
5 large bell peppers
20-27 jalapenos (small, or 10-12 if large)
INSTRUCTIONS:
Grind (use gloves) jalapenos, onions, and bell peppers.
Mix with everything and simmer until desired consistency.
Bottle and hot water bath for 20 minutes.
MAKES: Makes approximately 14 pints.
