"My doctor told me to quit throwing dinner parties for 4 unless there are 3 other people - [sigh]" - Gramps
I found this recipe at allrecipes and tweaked it a little. It's super yummy! And easy!
From the kitchen of: Christa Dastrup
1/2 cup Parmesan cheese
2 T. butter, softened
1.5 T. mayonnaise (Marilyn can't do Mayonaise...sorry folks. If you make this for me, just set aside a little of the seasonings and sprinkle them on my fish along with the cheese)
1 T. fresh lemon juice
1/8 t. dried basil
1/8 t. black pepper
1/8 t. onion powder
1/8 t. celery salt (I use celery seed since I have it)
1/8 t. paprika
1/8 t. garlic powder
dash of red pepper flakes-- more if you like it hot
Old Bay seasoning
1 lb. tilapia fillets
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Paremsan cheese, butter, mayonnaise, and lemon juice. Season with spices. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan and season with Old Bay. Broil a few inches from the heat for 2-3 minutes. Flip the filleets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minuters or until the topping is browned and fish flakes easily with a fork. Be careful not to over-cook the fish.
