Ruth's Chris is my favorite restaurant, so when I found this recipe, I KNEW it had to be delicious. Marilyn doesn't like sweet potatoes but she tasted this and said it was pretty good!

I can't wait until next Thanksgiving to eat it again. You can bake your own sweet potatoes by cleaning them then baking them for 50 minutes at 350 degrees, until they are tender and soft when pushing down on them.

1 cup brown sugar
2/3 cup all-purpose flour
1 cup chopped pecans
5 tablespoons butter, melted
~8 cups mashed sweet potatoes ( canned would work)
1/2 cup granulated sugar
1/2 teaspoon salt
1 teaspoon vanilla
2 eggs, beaten
3 tablespoons butter
Preheat oven to 350 degrees.
Combine brown sugar, flour, pecans, and melted butter in a mixing bowl. Set aside.
In another mixing bowl, combine sweet potatoes, sugar, salt, vanilla, egg, and butter. Mix well. Pour mixture into a buttered 3-qt baking dish. Top with the pecan mixture. Bake for 35-45 minutes, until topping has browned slightly.
