Vegetarian Biscuits and Gravy
So glad to find this recipe of one of my favorite meals. Very easy and yummy! The description on the website calls it "Vegetarian Biscuits and Gravy that even a meat-eater will love," and I'd have to agree!

INGREDIENTS:
2 Tbs unsalted butter (I used 4 because we used 1% milk)
3 Tbs flour
3 cups milk (original recipe says she used 2%, but we used 1%)
2 MorningStar Farms Veggie Sausage Patties, warmed up and finely minced (I used 2 Maple flavored and 1 Hot&Spicy flavored patties)
3/4 tsp sea salt (I used regular and it worked fine, also didn't measure, just put in a little)
pepper
8-10 of your favorite biscuits (we used 8 of the refrigerated kind, original)
sprinkle of cornstarch, if needed
INSTRUCTIONS:
Melt butter in saucepan over Medium heat.
Slowly add flour to butter and whisk continuously to make a roux. (I read somewhere that it should be at least sand colored or darker)
Add the milk and whisk until smooth.
Add the veggie sausage and salt and whisk continuously, letting the gravy thicken.
Salt and pepper to taste and serve over biscuits.
Note: If the gravy won’t thicken enough, you can mix 1 tbs of cold milk with 1 tsp of cornstarch and add to the mixture. (I just added a few shakes of cornstarch to the mixture before I added the sausage and it thickened just fine. You may need to slowly increase the temperature too, just keep whisking...)
MAKES:Enough gravy to generously cover 8 biscuits
