Lime Chicken Fajitas
From the Kitchen of MARILYN. This is one of those things where she just threw things together because they sounded good....and it ended up being delicious. You can eat this in a tortilla, or with quinoa, or just by itself.
INGREDIENTS:
2 large chicken breasts
1-1/3 large onion, sliced
3 cloves garlic, diced
Garlic salt (LOTS!)
Cumin (more than you would think)
1 red bell pepper, sliced
3 limes
Sour Cream
Shredded lettuce
Grated cheddar cheese to cover
Flour Tortilla (optional)
Quinoa (optional)
Tobasco green chili sauce (optional)
INSTRUCTIONS:
Fry up the chicken breasts, onion, garlic, bell pepper, and spices.
When you have that all fried up, turn off the heat, add the juice of 3 limes, and stir it in. Serve with Sour Cream, cheese, lettuce, and if you are like Kim, Green chili Tabasco sauce and more ground pepper on top.
SPECIAL NOTE FROM MARILYN: I can do this recipe with some adjustments. For me, I love to serve this chicken on top of my green Salad, with Italian dressing, a bit more Italian seasoning and garlic salt. then add quinoa. Closest thing I will ever have to a Cafe Rio Salad.
