ABOUT: I LIKE THIS RECIPE BECAUSE IT USES A LOT MORE BANANAS. I ORIGINALLY FOUND IT ON ALLRECIPES, BUT I'VE MADE A FEW ALTERATIONS AS NOTED. CLICK HERE FOR ORIGINAL.
4 C all-purpose flour (50% whole wheat is good)
2 tsp baking soda
1/2 tsp salt
1/2 Tbs cinnamon (not in original)
1/4 tsp nutmeg (not in original)
1 C butter (can use melted and cooled coconut oil)
1.5 C brown sugar (could replace with honey)
4 large eggs - room temp
2 tsp vanilla (not in original)
~4.5 C mashed bananas
Topping: (not in original)
2 Tbs brown sugar
1 tsp cinnamon
Preheat oven to 375 and prep muffin tins or loaf pans
Measure all dry ingredients into a bowl and whisk.
4 C flour, 2 tsp baking soda, 1/2 tsp salt, 1/2 Tbs cinnamon, 1/4 tsp nutmeg
In another bowl, beat butter and sugar:
1 C butter (or oil), 1.5 C Brown sugar (or honey)
Add:
4 large eggs, 2 tsp vanilla, 4.5 C mashed bananas
Pour the dry ingredients into the wet and stir together. Do not over-mix, just stir until everything is incorporated into the batter.
Scoop into the muffin tins. Each well should be nearly full to get a bigger, puffier dome on top. Or into loaf pans.
Bake for 20-25 minutes for muffins or about 45-60 minutes for a loaf until it passes the toothpick test.
MAKES: 24-36 muffins, depending on size.
