A delicious dessert I learned from my UVU Community Ed basic cooking class. According to the class recipe: "Compote is a dessert made of whole or pieces of fruit in sugary syrup. Whole fruits, sugar and sometimes spices are added to the dish over gentle heat. The syrup may be seasoned with vanilla, citrus peel, cinnamon, etc. This simple berry version is wonderful served warm over ice cream." I have to say Amen to adding it over vanilla ice cream. YUM! (We had this as dessert, Spaghetti alla Margherita as main course, and Traditional Grilled Garlic Bread as a side, and I have to say that this dessert just topped off a complete meal.)
From the kitchen of: UVU Community Ed Basic Cooking Class
INGREDIENTS:
2+ cups fresh berry mix (raspberries, blueberries, blackberries)
Half of a lemon
sugar, to taste (start with a few tablespoons)
INSTRUCTIONS:
Place berries in a saute pan over medium heat.
Juice half of the lemon into berries.
Add sugar and saute. Berries will begin to release their juices and sauce will thicken. Cook for 8-10 minutes. Add a few fresh berries to compote and serve warm over ice cream.
