Almond Joy Centers
AGAIN, I'M NOT A NUT FAN (WELL IT REALLY DEPENDS, BUT WE CAN TALK ABOUT THAT LATER...)
I LIKE TO MAKE THESE WITHOUT THE ALMOND CENTERS, SO THEY'RE REALLY MORE LIKE MOUNDS.
THIS MAKES A BIG RECIPE! I USUALLY CUT IT IN HALF.

INGREDIENTS:
2 pkgs (28oz total) flaked coconut
1 tsp vanilla
2 Tbs. flour
2 C sugar
1/2 C water
2 C light corn syrup
Pinch of salt
INSTRUCTIONS:
Mix coconut, vanilla and flour together in bowl.
Cook sugar, water, corn syrup, and salt to about 230°F (soft ball stage - see Candy Testing).
Pour cooked mixture over coconut and mold into balls while warm (let it cool a little bit... 230°F is still hot!)
Add almond on top, if you like (weirdo).
Cool and dip in chocolate.
These keep well in an airtight container and freezer.
MAKES: Approximately 80 - 1' pieces (I usually cut this recipe in half and get about 40)
