50% Tomatoes (Fresh, frozen, or both)
50% Other goodies:
Garlic
Onions
Zucchini
Peppers
Day 1:
If you have frozen tomatoes, pull them out and defrost overnight.
Day 2:
Wash and half any fresh tomatoes.
Roast all tomatoes on 2 cookie sheets in the oven. 400 degrees for 50 minutes each.
Put directly into blender and then into heavy duty canning pot.
50% of the sauce should be things other than tomatoes such as Garrlic, onions, zucchini, peppers all roasted in the oven and blended. Equal number of pans of tomatoes vs other things.
Taste the sauce and season with: salt, pepper, basil, rosemary, brown sugar, oregano
Citric acid to all jars ¼ t for pint, ½ t for quart.
Water bath canner 40 minutes for pints, 45 minutes for quarts.
