Good on hot days. The tang of lemon and rhubarb make an excellent bunch of ice cubes to put in the drink.

INGREDIENTS: 1 lb Rhubarb 1 C water
1/2 c. sugar
1 c apple Juice
1-6 oz Can pink lemonade Concentrate
1 litre 7-up
INSTRUCTIONS:
Comine first 3 ingredients in large saucepan. Boil. Reduce heat cover and simmer 5 min or till tender. Cool slightly.
Combine in blender process 1/2 mixture till smooth. Pour into medium bowl. Do again with the other half (obviously for people with small blenders)
Stir in apple juice and lemon concentrate. Pour into flat pan and freeze till firm.
Thaw somewhat, then do equal parts of 7-up to rhubarb mixture to serve.
