Creamy Zucchini Soup
ANOTHER WAY TO USE UP ZUCCHINI. THIS KIND OF REMINDS ME (KATIE) OF CHRISTA'S BROCCOLI SOUP.

INGREDIENTS:
2 medium onions
4 C chunky zucchini (will be blended later, so chunks big enough to cook through are fine)
3 C chicken broth
1/8 tsp nutmeg
1/3 tsp pepper
1/8 tsp salt
Sprinkle of cayenne pepper (my mom doesn't like spicy... I think a little more than a sprinkle would be good).
1/2 C cream (we used half and half)
Some cooked meat (we used Italian sausage, but I'm sure it would be great with some bacon sprinkled in there, or you could do without and have a vegetarian dish).
INSTRUCTIONS:
Saute onions in butter until translucent
Add zucchini and chicken broth and cook until tender about 15 min.
Add spices
Pour into blender and pulse until smooth
Pour back into the pot and add cream and cooked meat
Heat until warmed through and serve with grated cheese
MAKES: 4 servings
