Alfredo/Pesto Chicken
This kinda tastes like Shrimp portofino that they serve at Macaroni Grill. We really like it.

INGREDIENTS:
6 T butter
2 cups heavy whipping cream
salt to taste
2 pinches ground nutmeg
1 1/4 cup grated Parmesan cheese (I used part fresh, part dried)
2/3's of a cube of chopped Basil (I freeze mine in cubes, so guess folks. )
2 egg yolks
3 garlic's diced
2 small cans of drained sliced mushrooms or about 2/3 of a package of fresh mushrooms...cook with the chicken.
2 sliced chicken breasts cut in strips
2 large handfuls of fresh spinach
2 large chicken breasts
INSTRUCTIONS:
Melt butter or margarine in a saucepan over medium heat. Add heavy cream, stirring constantly. Stir in salt, nutmeg, Parmesan cheese, basil, garlic . Stir constantly until melted, then mix in egg yolk, stirring quickly.. Simmer over medium low heat for 3-5 minutes, add chicken. Serve over noodles, with additional Parmesan cheese if desired.
MAKES:Serves four....to eight.
