I'VE MADE THIS A FEW TIMES NOW, AND FIGURE IT'S GOOD ENOUGH TO HAVE A PAGE ON THE FAMILY SITE. GOOD SIDE DISH FOR ANYTHING GRILLED (WE HAD IT WITH THE CHIPOTLE CHICKEN & CREAMY SAUCE)

INGREDIENTS:
3 Sweet potatoes, unpeeled
Kosher Salt
2 tsp lime zest
pinch of cayenne
canola or olive oil
black pepper
1/4 C chopped cilantro
INSTRUCTIONS:
Parcook (boil until fork-tender) - I ended up microwaving mine until fork-tender
Cut each potato into wedges big enough to handle on the grill
Mix 1/2 Tbs salt with lime zest and cayenne in a small bowl.
Brush potatoes with oil and season with a little salt and pepper
Grill until golden brown on all sides (including skin) until just cooked through (about 1.5 min. per side).
Transfer to a platter and season with salt mixture and sprinkle with cilantro.
MAKES: 3-4 servings
