Breakfast Burritos
When I took my boys or family camping, I always made "Fried Potatoes and Onions". It was easy. I think I brainwashed my boys into liking it by talking it up so much. This is an extension of that. It's one of those "Throw stuff in until you think it has enough stuff" meals
From the kitchen of: Kim
INGREDIENTS:
Some spam or bacon, cubed. I prefer spam myself.
A chopped up onion
A potato or two, chopped up (cook in microwave first or they'll be too hard)
Some eggs (optional)
Some mushrooms (optional)
Some peppers (optional)
Some chopped tomatoes (optional)
A tortilla wrap (optional)
Some cheese (NOT optional)
Salt & Pepper to taste (you may want to add steak seasoning too for kicks and grins)
Catsup (optional)
INSTRUCTIONS:
Cook the meat until nearly done
Add the rest of the stuff and cook a little longer
It's done when you think it's done
Wrap it up as a burrito, or just pile it on your plate with plenty of catsup or salsa.
MAKES: My tummy smile. Mmmm. It's good, it's super easy, and it doesn't require precise measuring.
