I thought this looked like a reasonable healthy no meat dish so I tried it...and it was really good. I used (ok, I made up) the alternat instructions.
Ingredients
1 to 1-1/2 pounds fresh brussels sprouts, trimmed and halved
2 tbsp olive oil
1/4 cup breadcrumbs or cracker crumbs (I prefer cracker crumbs)
1/2 cup shredded parmesan cheese
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
InstructionsPreheat oven to 425 degrees F. Lightly grease a baking sheet with non-stick spray and set aside.
Combine brussels sprouts and olive oil in a large zip close bag and shake to coat.
Combine the breadcrumbs, parmesan cheese, garlic powder, salt and pepper to a bowl and mix well
Add the above mixture to the bag of BS/oil and shake to coat.
Spread in an even layer on the baking sheet (separate as much as possible) and bake for 15 to 17 minutes until the cheese is melted and the brussels sprouts are lightly browned.
Alternate Instructions
Steam the halved brussle sprouts for 3 minutes before coating with oil
Bake for 8 to 10 minutes insteadof 15 to 17
Put under the broiler until they look browned
